"Intersex" is an umbrella term for a set of specific developmental variations affecting either males or females. A tiny number (<10/ yr in UK) of babies are born w conditions where their sex is truly ambiguous even after careful medical examination: this is when sex is 'assigned'

To suggest that people w "intersex" conditions are not males or females but a third sex (or hermaphodites!), or that some people are 'more male', or 'more female' than others is both inaccurate and offensive. There are two sexes. Gender identity is a different question

Yes all people are one of two sexes. You said there are "many exceptions". This is not true. There is no third, fourth of fifth sex. You suggest that people born with intersex conditions are neither male nor female. This is offensive to people with intersex conditions.
