It makes sense that people have a general right to privacy against revealing their sex where it is not relevant, but not an absolute right to privacy or forcing others to accept fictionalisation (otherwise other protections like single sex services cannot be maintained)

A much simpler (it seems to me) solution to privacy would be for everyone to be able to obtain, at minimal cost, a copy of their birth certificate with sex redacted/omitted and for orgs to only ask for and record sex where it is relevant, with GDPR protection on the data [ends]
