Right, but I don't think that means we would describe sex as a 'spectrum' - rather than a binary i. e. Spectrum is continuous variation along a scale between two extremes (like height)

Infertile men are not on a spectrum somewhere between being men & women though (& vice versa). I don't think the fact of infertility, intersex conditions or other birth 'defects' mean that ppl who say they are gay, lesbian, straight etc..have fallen for a falsehood

Attraction is an evolved response to maximize your reproductive potential. Evolution working with your senses did not have direct access to information about chromosomes etc. You are attracted to traits that indicated reproductive fitness in the evolutionary environment.

People react to lots of things that they don't 'know' in a formal analytical sense - - like understanding language without having to formally know the rules of grammar, and all the exceptions.

I don't think anyone is disagreeing that biology is messy and categories are not clear cut. Similarly there can be ambiguity in the precise dividing line between 'alive' and 'dead' - but they are still meaningful binaries not a spectrum

No. Of course not. 'Race/ethnicity' is a social construct linked to a fuzzy set of traits. But even when we use this folk conception no one thinks there are only *two* categories!
