Given two models which differ in AIC by a single unit, how am I to interpret that? What is life like with/without an additional unit of AIC?

Agree with this. Multi model inference gets away from having to collapse your information into a simple “this model best” which treats factor importance as binary. Model averaging allows you to report a gradient of support either for models, or even for parameters in models!
