Might depend on how many other authors (just you and Post doc mentor, or others as well). If it's the latter, then I'd go last and corresponding.

That was my thought 100% until some colleagues in my dept made me consider being first so citation = “mine”. But. I think that’s not a good enough reason to pass on PI status... luckily my “postdoc boss” is cool with either ;)

Either. The crucial thing is that your promotion and tenure materials should be fully annotated, indicating your substantive contribution to every article you list, irrespective the order of your name in the list. That addresses any confusion that could arise between evaluators.

Last author and certainly corresponding author. Often, people just assume the last author is corresponding...and so could miss it if you're first.

If your Postdoc mentor is supportive, take last position. That may help more during promotion process. If possible, have one of your students as first author, in part to help her/him as well.
