Okay @TeamYouTube , an ad on your website for this game had the words ‘bloody’ and ‘wanker’ said out loud AND written on the screen. Just pointing out I’ve had ads taken away for using these words, yet ads themselves are allowed them no sweat. The system is still broken.pic.twitter.com/UoUznif3r4

Thanks for letting us know, you can block specific ads (advertiser or categories) from appearing on your channel. Here are the detailed instructions: https://yt.be/help/8u1N . You can also report the ad for review here: https://yt.be/help/6f5j

Out of curiosity, how does an ad like that get through in the first place? If bad language can be detected in our titles / subtitles / audio in the video and automatically restricted from advertisers, surely the same can be done for the ads before they're approved by YT, right?

Because youtube restricts advertising for content that advertisers dont want to be associated with. Youtube doesnt stop videos with swearing being uploaded, they just restrict the ads. By this same reasoning you can choose to not advertise ads that have this content in them.

But they are. Caddy could stop ads with swearing in them if he wanted. That's what they mean by category of content. Though probably not a good idea as they are probably the group of ads that do run adverts on content that features swearing/cussing.
