I know imdb is arguing that it's free speech to publish birthdays without an actor's consent, but what about an person's right to not have their identity stolen? If they had social security numbers they wouldn't be allowed to post those, so how is a full birthdate any different?

No you cannot, they will only change your birthday if you provide a birth certificate.
