I tend to wait until a day I don't have anything that desperately needs to be done then go and grind everything in Momentos that's currently available. Most of Mementos can be ignored until pretty late in the game without it massively impacting your playthrough, honestly...
Yeah we didn't have anything that had to be done, and getting Kawakami and Chihaya's quests done is a good idea, but when more area is going to open up in literally a few days, I feel like I should probably wait. I'm already super overleveled and have over a mill yen.

If you're not in need of cash or levels I'd leave it until flu season and do everything outstanding plus take the opportunity to merk the Reaper then

Flu season Reaper doesn't work in Royal, but also I do want to unlock Chihaya and and finish Kawakami so I won't wait too long.
