So in a longer version if Party A is holding a hostage, and Party B has the Ransom, and both sides are like "No you hand yours over first" Escrow is Party C who takes the briefcase, opens it, shows the money is there in full and is real, then Party A hands over the hostage.

Once the hostage is confirmed safe and unharmed, Party C (Escrow) gives Party A the money.
