A coffee that costs $2 means the cafe could probably make about $0.30 off of it max. You get coffee at a good cafe, you pay the price it cost to distribute, to import, to roast, to transfer to roaster, to process, and to farm it. This is not year 2005. Food & beverage establishments including cafes have LOW profit margins (~2.5%), most income goes towards overhead costs which is why they rely on volume OR they charge an arm & a leg (fancier spots). If a coffee cost you $2, they probably paid the poor farmer pennies per bushel.
