From the current anime season I'm watching One Punch Man 2, Carole & Tuesday and Fruits Basket. Really enjoy those but other shows I tried didn't do it for me. Am I missing out on something?

For sure! If you want to watch something a bit similar to HxH you can try Fullmetall Alchemist Brotherhood. Other than that Death Note and Attack on Titan are probably the first choice for people checking out anime for the first time.
