I will help you. Roll the meat into a ball. Place in the center of a hot skillet. Then SMASH the burger flat with a spatula. Season generously with kosher salt / pepper. Cook for a few minutes, then flip.

No smashing! That gets all the juices out, unless you want them flat. But also place a thumb 'dimple' in the center for even cooking.

If you smash in the first 30 seconds, the meat proteins haven’t begun to coagulate and thus you aren’t smashing out the juices.
