I don't think all history is just demographics and related mean traits, but demographics is the main driver (dare I say, destiny).
My overwhelming memory of it is "good institutions are good, bad institutions are bad, here's 300 pages of examples." I can't remember them considering the possibility that a skilled and innovative population demands inclusive institutions, rather than the other way round.
There have been some such attempts. In Dictator's Handbook there were some estimates for the size of the ruling fraction in various regimes. It appears to be predictive, but not as predictive as mean behavioral traits.
