Is there a good introduction for someone amateur to psychology to learn about the different methodologies?
Stuart Ritchie's introduction is pretty good & short, and so is the older introduction by Deary. You can find them on libgen.

IQ is just a relative metric for a person's standing. What matters is the trait it measures (when done correctly).
