If the work you do at an organisation is very different to your job title, what do you do? Use the title you were given on your CV and LinkedIn, or a title that better describes the work you actually did? If you’re hiring, which would you rather see?
Never happened to me personally. In hiring, I don’t think I would care either way, but would probably appreciate the story, if told with self-awareness. (It would be a yellow flag, though, if the “actual job” title was more prestigious than the nominal title.)
