Am I tripping or if you upgrade Signal Desktop, it saves all your messages in plain text (messages.json) + attachments locally so you can re-import them in the newer version? #fail #wtf

What are you expecting here? If someone had access to your hard drive then it's already game over. There is no magic encryption that Signal could use to protect you. You need to enable full-disk encryption in your OS. Or turn off message logging if you don't want logs stored.

this is not 100% true. Chrome still encrypts your data for instance. The approach here is to make someone else life harder to get to your secrets ...

Chrome encrypts *some* data (e.g. passwords) using a key which it stores in your OS keychain, but any app running on your desktop when you're logged in can read the key from your keychain. It doesn't accomplish much if your disk is already encrypted.
