"Lab-grown meat" is a metaphor for "Creating and editing life." It just so happens that the engine of capitalism can get behind making chicken wings. Creating human embryos and livers? A bit more controversial. And less money in it. But everyone likes ribeye steaks.
The downstream unintended consequences of introducing new foods/life should not be underestimated. While true that it is all ‘natural’ and part of ‘life’, non-naturally occurring combinations of particles can cause devastating effects to the current equilibrium.
