I have tried to read several books about category theory, but they all appear to dissolve into lists of trivial details before they ever clearly say anything new or powerful. Is category theory really just the idea "hey we can draw equations in 2D instead of 1D",

I think the problem with teaching category theory is that you need very much bootstraping until you reach a point where you can reap the benefits. I think the best way to learn it is if it is developed side-by-side with some application area. But I personally don't know of any
