and then all these books are just listing out what that looks like, or is there really a separate body of ideas about something that isn't already covered everywhere else?

I'm a) an academic b) familiar with CT c) involved in high-performance compiler research d) sympathetic to your software/compiler approach. CT is extremely useful and should not be dismissed, but I'd agree that in "normal" software its usefulness is limited.

On its own, it's effectively the formalization of the generalization of functions. The notation is useful in domains such as group theory. That's about it.
