Even if vaccinating 24/7 meant there were some days where vaccinations had to stop because of a lack of supply, it would still be worth getting as many jabs in arms as possible ASAP.

No... 11pm is kinda my cut off as I’ve got work the next day. I’m sure there shift workers who would benefit.
-
But you’d still be happy to be vaccinated between 8 and 11 if it brought forward your vaccination?

Helping vaccinate people like your fil is a different problem - more local vaccination centres? - but my point is really that the demand is there so the only thing that stops 24/7 vaccinations should be a lack of vaccine.

I suspect they wouldn't have enough of the vaccine to work 24/7.
-
Quite possibly not, but a lack of vaccine should be the only impediment. Otherwise, if the demand is there (which I'm sure it is), then jabs should be available more or less continuously.

The unions are the issue here, they won’t “cave in“
-
Call their bluff, if so. Imagine how much blow back the unions would get if they were seen to be slowing down vaccinations.
