When I connect to chromecast from my phone after opening the app and then I pick something live to watch, it plays the correct channel, but from hours earlier with no way to get back to live

That's strange. Have you tried restarting your device? Also try checking for any app updates or reinstalling the app. Let us know if that helps.

Everything has been completely reset (did a factory reset on both the chromecast and my phone, I've also moved and changed internet providers, no change).
