Worked fine all day yesterday. Last night and today I can't stay connected. Shows the link is working but when I try to enter it through my quest 2 it crashes me back to the quest 2 desktop and says the link has disconnected.

Based on the recent Amazon reviews of that 3rd party cable you linked, it could be a cable failure. Got an official oculus cable. The same result connected into the graphics card port. Plug it in. Oculus app shows green. Put it on, says I can connect. Connect and see allow access to data window. Anything I select dumps me back to Quest desktop. Headset disconnects

Otherwise you may want to try a USB-C to A adapter to be able to plug it directly into your motherboard.
