I think he's already pretty much done but is now letting a little time pass after the end of the show. My guess is the next book will come out next year.

I agree. GRRM only gave them the broad strokes of the ending when he left after season 4, and I believe the whole reason he left was because he realized D&D were arrogant hacks who thought it was their own creativity & storytelling that made the show successful and not his
