It actually does. I watched a documentary explaining that what we think of as "Chinese food" is the cuisine specifically of immigrants who came to the US mainly from the Fujian province.

It would be like if a bunch of Americans from Louisiana immigrated to China and all Chinese thought all Creole food was "American Food". It IS American, but it's not representative of the majority.

That China is any one thing. It is a ridiculously diverse place and on par with America for size and geography. Nearly impossible to make generalizations about. Except the food, everyone knows Sichuan has the best. And 煎餅.
