I'm pretty sure you also can't distill alcohol without a permit and then possess it. (Which is distinct from just possessing alcohol obtained via home fermentation)

I disagree! In California and most other states, you can distill your own spirits and share them with friends. It's when you start SELLING those spirits without getting permits and paying taxes that the government starts getting cranky. (Same for fermented stuff, like I make.)
