What does the demo unit program even do for a regular device?

It’s not meant for your regular everyday device. It turns your device into a demo unit such as the ones seen on display in an Apple Store. Depending on your device type, it will install either the Touch ID or Face ID apps as well as Screen Saver, Pricing, etc.
