haha this isn't the first time i've made this sign error.. for some reason i can always remember -dU/dx = F, but i always forget it if i jump right to the line integral

It's sort of a sign convention. If we defined U using dU/dx = F then people might wonder why K-U was conserved, but they might feel happier about the Lagrangian K+U.
