I can recommend some starting points, beyond that I'd look at open curricula at strong programs, like MIT's open courseware. They have syllabi, video lectures, homeworks, exams, etc for many of their courses in a standatd sequence.

To start I recommend http://stat110.net , the videos+book by Hastie & Tibshirani, and the MIT OCW intro courses on probability/stats.

Tbh you can get through most intro quantum texts with basic probability theory, calculus, and linear algebra
