I don't know. Considering that it would be a whole new series, in a probably very different setting ... why not? Kids wouldn't miss anything they couldn't watch later and it seems unlikely that it would cause any damages to other parts of Star Wars.

If they hadn't killed off Han, I could've seen a Logan-like R rated "Solo" with Harrison Ford, showing how he screwed up his marriage with Leia and why Ben is so messed up! But yeah, mostly, R ratings don't go with Star Wars.
