I think the lack of the latter boils down to the fact that a proportionally much smaller portion of Americans have served in the military today than was the case at any point during the Cold War, so shows and movies about the everyday minutiae of military life have less resonance

I think that's part of it. Having been born in the '80s, for awhile it was surprising to me to find out so many stars had been in the military. Bogart, Jimmy Stewart, Elvis Presley, & so many others. Ending the draft in conjunction with war was a major change for the culture.
