      I guess, I feel like there are commentators who make challenging prevailing assumptions a core part of their output, and who are often described as contrarian for this reason, but who do not defend the status quo

      Sure, but there's a difference between being contrarian on policy issues and having an identity as a contrarian as your journalistic persona (as, say, Hitchens did).

          If you can demonstrate that Hitchens ever said anything he didn’t believe, I’ll concede he was being contrarian.

          Maybe the useful definition here is contrarianism as surprise establishmentarianism; I suspect many people are aware of the “even the liberal New Republic” formulation.
