Suddenly finding it shocking that there was never a Star Trek Christmas special...unless I’ve blacked it out?

Maybe the sun god worshipper episode, which the reveal was worshippers of the son of God.

Definitely not many mentions of human religions, tho Bajoran religion is a huge part of Deep Space Nine! I do think it comes down to the idea that Earth is v secular by the time of Star Trek

And that’s one of the reason as a whole I don’t enjoy
#DS9, as much as the other Trek shows. Weirdly DS9 has a lot of my dearest characters, but I physically repel by Sisko, especially the prophet phase.

There’s the one weird one that ends with the cast reflecting on Jesus on the bridge. Bread and Circuses. It’s a weird episode.

Is that the Romanesque episode where they think the people are sun worshippers, but they are actually saying "son"?

There are references to Christmas, like when Voyager gets turned into a tree ornament or the tree in Generations. In the TOS ep Bread and Circuses there is an explicit reference or Christ. Other than that, humanity seems to have lost religion sometime around the Eugenics Wars.
