Dany’s actions felt like the working out of an idea of what the show is supposed to be about, rather than an organic evolution of character, or even a genuine response to what happened in the battle.

Well, it's generically true that once the show moves beyond the already written books, the storytelling becomes schematic (likely because they're working from Martin's broad sense of where things will go rather than detailed stories).
