Geography? Southern Baptists are dominant in the South; most Jews live in the North.

Although I should note that, unless you went to a very small or specialized college, you probably *did* meet some Baptists, they just didn't mention their religious beliefs to you. It's not usually a conversation-opener.

Crazy theory: even Baptists are smart enough to figure out they should avoid talking about religion on college campuses.

Perhaps one is simply more inclined on average to organize groups *in general* than the other. It's at least partly a cultural phenomenon-- urban values favor social organization.
