Believe what you want. The whole idea behind cryptocurrencies is decentralization. I cannot see a centralized network gaining so much importance.
e.g. You might chose, for example, Apple, Microsoft, IBM and the Linux Foundation as 4 validators. You don't have to trust Microsoft. You just need to trust that Microsoft and the Linux Foundation are not likely to collude. And if they do, all you do is choose a different set.

What if I trust no one? Why should a centralized organization like those you cited be trustworthy?

They were just examples of organisations that you might or might not trust and that they might have little impetus to collude. You can choose whichever nodes you do trust not to collude.
