I think if you asked them they would of course say they freely chose uninfluenced. And if you surveyed women in any decade prior to 1960 years ago they would have said they obviously wanted multiple kids.

Two is about the average now. A web search shows in early 1900s it was about 3.5. and back to 1800 was closer to 7.

Yes, when they still were very likely to die before adulthood. Once you could be fairly sure they'd all live, the average was 2.4, in England consistently in England. Both my grandparents had two and this was a norm. They hoped for a boy & a girl.
