It's the idea that it's a "law" that I don't really get. As if they're imposing upon themselves arbitrary rules that they may not actually like, or that they may not understand.

Well, quite. When I was a Christian, I imposed several rules on myself that I didn't understand or like.

Even as children we were taught to read the ingredients on everything, for example, we couldn't eat Oreos because they had lard. Some went as far as to not eat cheese because of pectin.
