I'm doing a podcast episode on one of my favourite topics: Tea! So, tell me: what is your favourite thing about tea? Your favourite tea? A strong memory about tea?

There is only one beverage which can be described as 'tea.' It is black tea to which milk is added later. It must be made with boiling water. It should be drunk 6 minutes after pouring. Biscuits may be dunked in it. There is need of missionaries to spread the word in America.

Amen! Milk first is an abomination. And one might note another necessity: the cup ought to be warmed with boiling water. I may dispute the six minute steep, though... I do my best to evangelise when I'm back in the U.S. on academic breaks.

Wait, what's up with milk first? It's unnecessary nowadays but does it really make a difference (other than being able to see how much is enough)?

I mostly drink coffee to avoid such controversial issues. But really... is there a real reason for milk after (if milk is taken)?

Yes, because the leaves only brew properly if in boiling water. The milk cools down the process, so you don't get quite as strong of a brew.

You don't mix the tea with the milk before the tea is brewed. The milk historically went in the cup first before the tea because china could crack. Chucking leaves in milk is obviously completely nuts. In THAT case I agree.

Then it doesn't matter when you add the milk. If already brewed. Milk first or last is a debate for making it in a mug.

What?! Isn't this just a big misunderstanding of the origins of milk first? It can only ever be applied to separately brewed tea. This is definitely a hill I am willing to die on.

You are on the right side, Brian, and I am sorry to be the one who had to break it to you that some people add milk to the teabag and then pour the boiling water on. I hope you were sitting down.

I am content in the knowledge that these people are fools who didn't stop to think that in days of yore, teabags weren't very common and so it's unlikely that one would ever soak in some milk. These people are wrong and irrelevant.
