Psychologists, I would really like to understand why I, someone generally regarded as exceptionally patient, become so immediately and furiously angry with people being blithely incoherent. Why should it matter when I could just ignore them?

Since anger is a rare emotion for you, it may be worth looking for a common thread running through those few outliers. I used to view this sort of systemic incoherence as a durable, scalable evil, so it bothered me more than one-off errors. I always think long term, big picture.
