What do you mean by mental adaptations? That we have evolved brains?
What is anyone's guess? The brain isn't a trait. It's something that evolved due to natural selection? Do you accept natural selection?

it's anyone's guess what our brains evolved as a by-product of - natural selection isn't explanatory

I don't know what you mean.

appeals to natural selection don't explain which of two co-extensive traits is an adaptation and which is a by-product of adaptation
-
What do you mean by this? I'm sure you could explain clearly if you wanted to. Think about why you don't want to.

If you're just claiming that some traits emerge as by-products of others, of course. Cats probably fear cucumbers coz useful re: snakes.
