If a YE Creationist applied to be a Biology teacher surely that would affect their ability to do the job. Is that not valid discrimination?

Yes quite. Ethically it would be wrong to discriminate against anyone on the basis of their religion. Practically, it may be necessary.

If an evolutionary biologist happens to be Christian or Muslim, they shouldn't be discriminated against coz co-religionists deny biology.
