If we get rid of that image of the engineer as a man, women will then realise they're just as interested in the same numbers as men are.

But this is the wrong focus. A gender egalitarian society is not one in which women make all the same choices men do.

Women don't have to start preferring engineering to psychology or visual porn to erotic fiction to have gender equality.

Feminists need to stop making typically male preferences the default 'best options'. Women won't buy it & will do what they want anyway.

That is what gender is: it positions people socially, including culturally. The meaning of 'woman' and 'man' is subject to cultural change.

This is most often seen when STEM is presented as better than female dominated realms like education & healthcare.

There probably are people who would argue that, but what I find more interesting is how (/why) gender-aligned preferences propagate.
