One thing I struggle with in the "cals in < cals out = loss" is poo. Does what you eat change what you poo, and so what % of cals absorbed?

You aren't 100% efficient converter of food to cals. Rest goes out as poo. Does some food convert more efficiently? Probably. Hence complex

Some food doesn't digest as well but I think this is reflected in the calories.

Sort off. Cals are calculated off how well a dehydrated sample combusts, and energy given off by that. So not exactly the same..
