I would be inclined to think skepticism and agnosticism would be more highly correlated? Or does atheist title subsume agnostics?

Everyone is agnostic coz the existence of God is unknown. It's not a useful term except in philosophical sense of 'unknowable.'

I suspect devout catholics wouldn't describe themselves as agnostic, and they believe in spite of lack of evidence.

Generally, I lump atheism in with most religions, since it still demands adopting a position on existence in face of 0 supporting evidence

There's a lot of religions then. We all assume the non-existence of millions of things for which there is no evidence or we wldnt function.
