Philosophy of science. Chalmers' "what is this thing called science?" A great intro.

I would say a book about the philosophy of science, because that is entirely concerned with how we know what’s true

Maybe an introduction to philosophy textbook would do.

Russell’ ‘Inquiry into Meaning and Truth’ is worth a look as an intro to ‘truth’ as a philosophical concept. The book is a bit old fashioned and doesn’t do justice to Darwinian pragmatist views (I.e. Peirce). But it is very clear and well argued. So it’s a good starting point.
