is it possible to later switch from beta to release channel without losing data?
You simply need to change the release channel from Beta to Stable. It's the same OS and updates between the channels are fully compatible with each other. Changing channels doesn't involve any data loss. It only changes the channel where the update client uses to obtain updates.
It's also worth noting that if you install from the Beta factory images, the default channel is still the Stable channel, because the Beta releases are not something different from Stable releases. It's earlier access to the same releases, including ones that don't reach Stable.
Every Stable channel release has been through the Beta channel. The metadata is simply copied over to the Stable channel. Not every Beta channel release makes it to Stable, since issues need to be resolved with new releases before it can be moved to Stable. Hope this makes sense.
