This is all to say, what does "hoppy" mean? What's the common aroma denominator among the adjectives catty, citrus and floral?

"catty" or "ribes" are usually adjectives beer nerds use when they don't want to say something smells like cat piss.

The compound in question is 3-Mercapto-3-methylbutan-1-ol. Common in sauvignon blanc.

Not to be confused with 3-methyl-2-butene-1-thiol with is the compound that results from a beer being lightstruck.
