There are daily numbers here (https://coronavirus.health.ny.gov/regional-vaccination-data …) which gives figures for 1st and 2nd doses, and if you subtract that from total doses for the day, you get boosters. I wish they'd break out 5-11s and 12-17s though.

And yet cases are rising in NY, which has you threatening more restrictions. The answer you must please grasp is that, in an age of high vaccination, case numbers do not matter. Mild breakthroughs are irrelevant. Only hospitalizations and deaths matter.
