We don't know for sure what the safe level is. Unfortunately unlike my car which recommends minimum octane 3% above usual petrol, there is no sticker inside peoples mouth telling them what their maximum safe carb intake is. Probably depends on model and year of manufacture?

There are individual differences, as acknowledged by authors. In discussion groups online, PWD report their CHO tolerance & BGL responses - some LC-ers OK with legumes or fruit, for example, others not. 4% either way may be the tipping point for some ppl.pic.twitter.com/Vp4j53oNi0

Yes - the concept of the tipping point - and the “titration of carbs” This is what individualized interventions will “look like” and, I expect, will change over the course of ones life.
