Let's say you're eating 300g of potatoes...that's ~12g less carbs total. Which is basically nothing. This is not a 'healthy' option really

Potatoes are pretty healthy as a carb option anyway. It's mostly in how you cook them, not in the potato itself (i.e. fried vs baked)

Oh, final thing: unless they have replaced the carbs with fibre, that's just extra water content which means a less flavorsome potato!
